My Problem With Bread

A couple of months ago I got an itch to make homemade bread. It doesn't happen often. The last time I made bread was probably about a year before. But on this particular day it sounded like a good idea. So I got out my kitchen aid (without which I would probably never make bread!), and went to work. A few hours later out popped these two beautiful loaves of bread. UNFORTUNATELY.....when I copied down the recipe I left off the salt. My beautiful bread was as blah as blah can be. I was so upset. But I put my apron back on and went to work on another batch. I called my mother-in-law to find out how much salt the recipe called for and the second time it turned out perfect. My faith in making homemade bread had returned.
THEN....yesterday I got the itch again. I got out the kitchen aid put on my apron (which I got from this website) and Ava and I went to work. A few hours later out popped two loaves of beatiful bread that were as blah as blah can be! Now this time I KNEW I had added the salt but it was still not right. I bumped into my mom-in-law a few hours later and told her the story. "I thought you said to add 1 TBSP of salt" I said to her (and since I half her recipe I only used 1/2 a tbsp). "No" she says. "I use 1 TBSP per loaf!"
So maybe I'm just not cut out for making home made bread.

Yes it looks good! It took me a year to find a bread recipe I liked and then another couple of years to make it my own! I have some horror stories about making bread!! lol

Seriously, Jenn... I make bread, rolls, etc, ALL THE TIME and just recently I too have been forgetting to add the salt! One day I was making these beautiful rolls for a get-together with the Cannons and when we went to savor a bite, they were blah, blah, blah!! (I almost cried!) Don't give up, though. Homemade bread is sooo good.

Keep trying!! Homemade bread is worth all the tears you put into it! I too have forgotten the salt too many times to remember.

Personally, I NEVER make bread with my kitchen aid... it always comes out too heavy and dense (too much flour mixed in)... but that doesn't seem to be your problem :)

As for the salt-less loaves: make up some herb butter (I like onion powder, garlic powder, and italian seasoning) and add extra salt to that -- I don't have a specific recipe, it's all just to taste. Spread it on your blah bread and it's delicious!

Tiffany is right on. You can cover up saltless bread in many ways, and DON'T stop trying. Also, like Tiffany my KitchenAid makes the dough too dense. I miss my Bosch. Remember the story about the first time I made homemade bread? Dad took one bite and said, "It's almost a miracle, you almost turned these stones into bread!" I went on to making lots of really good loaves.

Don't get discouraged. The first time my MIL taught me how baked bread it didn't come out as beautiful as yours did. It just takes practice and memorizing the recipe helps alot! You'll be good as some point, just like your mother in law.
